Ingredients: – 1 cup thick Poha (flattened rice) – 2 tablespoons oil – 1 teaspoon mustard seed – 1/2 teaspoon cumin seed – 1/2 cup finely chopped onion – 1/4 cup chopped green bell pepper (optional) – 1/4 cup boiled peas (optional)

– 1-2 green chilies, finely chopped – 1/2 teaspoon turmeric powder – Salt to taste – 1 tablespoon lemon juice – 2 tablespoons chopped coriander leaves for garnish – A handful of roasted peanuts for garnish (optional) – Fresh grated coconut for garnish (optional)

Rinsing Poha: – Rinse the Poha under running water in a sieve or colander. Be gentle to avoid breaking the Poha. Let it soak in water for about 5 minutes, then drain excess water. The Poha should become soft but still retain its shape.

Tempering: – Heat oil in a pan over medium heat. Add mustard seeds and let them splutter. Then add cumin seeds.

Sautéing Vegetables: – Add finely chopped onions and sauté until they become translucent. – Add chopped green chilies, green bell pepper (if using), and boiled peas (if using). Sauté for a couple of minutes.

Seasoning: – Add turmeric powder and salt. Mix well.

Adding Poha: – Add the soaked and drained Poha to the pan. Gently mix everything together, ensuring the Poha is well coated with the spices. Cook for a few minutes.

Finishing Touch: – Add lemon juice and chopped coriander leaves. Mix well. – If you like, you can garnish with roasted peanuts and fresh grated coconut.

Serving: – Serve hot Poha with a side of yogurt, chutney, or a slice of lemon.
